MISHU's Dairy Free Flan Recipe

I grew up with Flan. Flan is a soft pudding like dessert, with a little of caramel taste and custard feel. I was thrilled to have found this recipe from Maria Emmerich, that is high protein but also lactose and dairy free. When I tried it it brought me right back to my childhood, and I realised how much I was missing this dessert!

The original recipe calls for caramelizing allulose sweetener. As you all know allulose has not yet been approved in Europe (send me a message if you want to know more about this), so in this case I have replaced the allulose part of the recipe for two alternative options.

Ingredients needed:

- 2 full eggs
- 2 egg whites (or alternatively 60ml egg white liquid) 
- 1 cup of sugar free almond milk
- 1 tablespoon of vanilla extract
- 3 tablespoons of erythritol powder separated
- Option 1 Heavenly dark syrup (Steviala)
- Option 2 Erythritol powder and Stevia caramel flavouring

Kitchen tools needed:

- 1 bowl
- 1 oven dish
- 4 ramekins (oven safe small bowls). You can also use 1 oven safe bowl if you don’t have ramekins


1. Preheat oven to 180c
2. In a bowl mix the eggs, eggwhites, almond milk and 2 tablespoons erythitol. Mix well until all the eggs are well combined and everything is smooth
4. Squirt 8 grs of heavenly dark in each ramekin
4.a. Alternatively (if you are sensitive to FOS and cannot have the heavenly dark) put 1 teaspoon erythritol in each ramekin and 1 or 2 drops of caramel flavouring stevia, 1 teaspoon of water and mix 
5. Divide the egg mixture into the 4 ramekins in equal parts. 
6. Fill the oven dish halfway with water
7. Put the 4 ramekins in de oven dish so that they are inmmersed in water until half way. And they can cook “au bain marie” in de oven.
8. Place the oven dish in the oven and bake for no more than 30 minutes. Check them out at 20 minutes, the flan should have been set. 
9. Take it carefully out of the oven and let it cool down before putting it all in the fridge.
10. Exciting part is to take them out of the fridge after a couple of hours, slowly run with a knife through the edges and flip the ramekin on a flat plate and see the flan with its “caramel” sauce come off onto the plate.
